Leaving the Fernando de Castilla Bodega we proceeded to the Lustau Bodega where we were guided into the wine cellars by a company official.

At Lustau you can really see why the wine bodegas are referred to as the second cathedrals of spain. Soaring ceilings and repeating arches make the bodegas appear like temples dedicated to the wine they house.

The bodegas are one of the keys to making fine sherry. Even the earth the barrels of wine sits on is specially selected. The bodegas central function is to control humidity and temperature within the structure. Perhaps even more important than in regular wine, as sherries age, their humidity and temperature must be maintained properly for years.

Addtional key ingredients for successful sherry is the management of the yeast in the lighter Sherry and the mixing of the wine during the aging process.
