This page is less about food than a drink I did not get a chance to try while I was in Valencia.

Above photo - This Horchateria, serves Horchata (tiger nut milk).
While touring Valencia with our guide, my wife noticed this ornately tiled Horchateria. We learned that Horchata is a drink found in many bars and cafes of Valencia. Brought to Valencia by the Arabs, the drink was described to us as being sweet and milky. This cold drink, made from almonds, comes in a semi-frozen state and is usually served with soft/sweet bread (fartons) or a crunchy wafer (rosquilletas). We had hoped to sample some Horchata before leaving Valencia but it just did not happen.

You only need to take a visit to Valencia's central market to know Valencians take their food seriously.
Valencia local dishes usually incorporate rice and seafood.
Photo left - this may look like paella but it is actually a Valencian rice dish with its own distinct flavor.
